Veronique LAZERAT, producing of Safran into Hollow. Saffron cultivated forever in the Limousin. A new cake creusois: The Saint Blaise
There was Creusois with hazel nut, Trepaïs with sweet chestnut, it exists today the Saint Blaise with the saffron.
The saffron of Font Holy Blaise is in his first years of production. This saffron plantation, initiated by Veronique Lazerat, on the commune of Fontanières, close to Evaux-the-Baths, produces already a saffron of an exceptional quality. The saffron, one calls it the red gold. It is the food expensive of the world. Expensive than truffle or the Iranian caviar, it reaches up to 35.000 euros the kilo. But for this price, the consumer is not sure of what it buys. A team of Special correspondent discovered that this spice is extremely defrauded. At the beginning, the saffron is a vulgar onion which costs hardly 30 centimes of euros. But once per annum, at the end of October, it is metamorphosed in flower of color violet, in which hides the famous pistil bright red which is worth gold. It is cultivated in Iran, India and in Morocco. Jean-Charles Doria and Sebastien Girondon inquired in Morocco at the time of harvest. It is in the middle of the Berber mountains of the Atlas that are cultivated each year two tons of saffron. The peasants who collect it do not manage to live about it. However, of the traders succeed in making fortune, by buying the productions at low prices and by reselling them up to thirty times more expensive on the Western markets. The fraud is also very profitable. In Morocco, on six saffrons bought in souks, five samples prove to be curcuma or paprika, or worse, fibres mixed with detergent, dangerous products for health. In France, analyses in a laboratory, made it possible to put at the day one swindles, a pure saffron guaranteed on sale in many trade, which is actually only one banal plant soaked with artificial dyes. Lastly, the production of saffron in France starts again little by little, after having completely disappeared during one century. Some smelled the good thing. Veronique Lazérat has in the Limousin the largest saffron plantation of France and arrives, by producing two kilos of saffron per annum, to gain much money

History of Veronique LAZERAT
Veronique LAZERAT was born in Parisian suburbs. At the 28 years age, in 1999, it leaves Paris and its area and considered on a long-term plan.
